Safety: USDA recommends cooking intact beef steaks to at least 145°F (63°C), followed by a 3-minute rest. Mechanically tenderized steaks require special attention to package directions.

Steak Cooking Time Calculator: How Long to Cook Steak
This steak cooking time calculator estimates a practical checking window from the steak’s thickness, cut, grill heat and final internal temperature. It uses cut-specific grilling ranges rather than pretending every one-inch steak cooks identically.
| Cut | Thickness | Approximate total grill time |
|---|---|---|
| Boneless ribeye | ¾–1½ in | 7–20 min |
| Boneless strip | ¾–1 in | 7–15 min |
| T-bone or porterhouse | ¾–1½ in | 8–25 min |
| Tenderloin steak | ¾–1½ in | 7–20 min |
| Boneless top sirloin | ¾–1½ in | 7–30 min |
These published ranges span charcoal and gas grilling and temperatures from 145°F to 160°F. The selected endpoint tells you what to verify with the thermometer; it does not create false precision by changing the published clock range.
Steak cooking time by thickness
The steak cooking time calculator treats thickness as a primary input because increasing thickness adds time nonlinearly. A one-and-a-half-inch steak is not simply 50% slower than a one-inch steak: heat transfer, cut shape and grill recovery matter. Measure the thickest part before choosing a setting.
Reverse-sear timing
For reverse searing, a low oven brings the center up gradually before a hot skillet creates the crust. A published Beef Checkoff porterhouse method uses a 225°F oven until the center reaches 105°F, followed by a 3- to 4-minute sear on each side while continuing to monitor temperature. In reverse-sear mode, this steak cooking time calculator provides a reminder for when to begin checking—not a promised finish time.
Medium rare and food safety
Restaurant doneness labels are not perfectly standardized. USDA’s safety recommendation for intact beef steaks is 145°F followed by at least a three-minute rest. The Beef Checkoff chart labels 145°F as medium rare and 160°F as medium. This calculator does not recommend a finish below the USDA minimum.
Where to place the thermometer
- Lift the steak with clean tongs or place it on a clean plate.
- Insert an instant-read probe through the side.
- Position the sensing area in the coolest center portion.
- Avoid bone and large seams of fat.
- Check a second location if the steak is uneven.
What changes the steak cooking time calculator result?
- Gas-grill models and charcoal intensity vary.
- Cold, wind and opening the grill reduce heat.
- Bone and fat change how heat moves through the steak.
- Mechanically tenderized beef may carry surface bacteria into the interior; follow its label.
- Carryover cooking continues during rest.
Use the steak cooking time calculator to decide when to begin checking. Use the thermometer—not color, grill marks or the clock—to decide when the center has reached the selected temperature.
